Cavolo nero is a type of kale also known as black cabbage or Tuscan kale. It is non-hearting with long strap-like leaves similar to savoy cabbage in texture. This type of kale can be used the same way as cabbages, or in dishes with a distinct Italian flavour. It is a good source of lutein which can help with eye health, as well as vitamins K,which plays a role in maintaining normal bones, and A and C, which help the immune system to function normally.
Kale is among the most nutrient dense foods on the planet and commonly referred to as King Kale. A single cup of raw kale contains a powerhouse of Vitamin A, K, C, Vitamin B6, Manganese, Calcium, Copper, Potassium, Magnesium. It also contains vitamin B1 (thiamin), vitamin B2 (riboflavin), vitamin B3 (niacin), iron and phosphorus.
Kale contains very little fat, but a large portion of the fat in it is an omega-3 fatty acid called alpha linolenic-acid.
